Beef and Onions

INGREDIENTS

  • 1.5 - 2 lbs beef (thinly sliced)
  • 1 medium onion ( julienned)
  • 1 bunch scallions 1/3 cut  
  • 3 tbsp olive oil
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 3 tbsp soy sauce
  • Salt and pepper to taste

DIRECTIONS

  1. Mix 1 tbsp oil, 1 tbsp soy sauce, onion & garlic powder & salt & pepper
  2. Coat beef with mixture
  3. Heat large skillet over high heat
  4. Add 2 tbsp oil
  5. Brown beef and then set aside
  6. Stir fry onions and scallions
  7. Add 2 tbsp soy sauce
  8. Add back cooked beef then stir
  9. Ready to Serve!

  • Most Asian inspired dishes go well with rice and this beef and onions dish is no exception.  This recipe may be converted to pepper steak by using bell peppers and onions instead of scallions and onions and add basic brown sauce.

Beef Loin Strip Steak

INGREDIENTS

  • (2) 8-10oz strip steak
  • 1 tbsp soy sauce
  • 1 tbsp teriyaki sauce
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 2 tbsp olive oil

DIRECTIONS

  1. Poke a few fork holes on each side of the steak
  2. Coat steak with soy sauce and teriyaki sauce on both sides
  3. Sprinkle steak with onion and garlic powder and salt and pepper on both sides
  4. Massage the steak to soak the marinade
  5. Let stand for about 15 mins 
  6. Heat large skillet over medium heat
  7. Add 2 tbsp oil
  8. Fry steak for 4 mins on each side or until desired doneness
  9. Let stand for a few minutes
  10. Ready to serve!

  • Not all steak cuts are created equal.  Good cuts like your filet mignons are best left with little seasoning to truly savor the meat quality.  Meat thickness is another factor to consider.  It is better to undercook steak and just throw it back in the fire for another minute or 2 if needed.  I prefer mine on the pink side (medium to medium rare). It is imperative to let the steak rest for at least a couple of minutes before serving to redistribute the juices back through the meat .  Good things come to those who wait!

Beef and Zucchini Stir-Fry

INGREDIENTS

  • 4 small zucchini (strips cut)
  • 2 carrots (strips cut)
  • 1 medium onion (julienned)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 - 1.5 lb beef (thinly sliced)

 Basic Brown Sauce

  • Mix 1 tbsp flour, 2 tbsp sugar, 3 tbsp soy sauce, 1c broth and bring to a bubble in medium heat 
  • Salt and pepper taste 

DIRECTIONS

  1. Heat large skillet over high heat
  2. Add 2 tbsp oil
  3. Fry beef strips and set aside
  4. Use the same skillet to stir-fry vegetables for 2-3mins or until desired tenderness
  5. Add salt & pepper to taste
  6. Add cooked beef strips
  7. Drizzle desired amount of sauce and stir
  8. Ready to Serve!

  • There are so many combinations of vegetables you can stir-fry.  I normally add mushrooms with this recipe and use fried tofu instead but I had some beef strips leftover.
