Jazzed up Oatmeal

INGREDIENTS

  • 1/4c Old fashioned oats
  • 1/2c water
  • 1 tbsp brown sugar
  • 1/4c peaches (diced)
  • 1 tbsp craisins or rainsins
  • Dash of cinnamon and nutmeg


DIRECTIONS

  1. Microwave oats and water for 2-2 1/2 mins
  2. Add brown sugar and stir
  3. Top with peaches and craisins
  4. Sprinkle cinnamon and nutmeg
  5. Ready to serve!

I am more on the savory side of breakfast but there are a few sweet ones in my 'go-to' list like this one.  You may use canned or fresh fruits with this recipe.  You may also use any preferred fruit varieties like pears, apples, or bananas.  This jazzed up oatmeal is a healthy kick to start the day!

Fruit Salad

INGREDIENTS

  • 4 – 15oz can Fruit Cocktail (drained) 
  • 1 – 12oz jar Coconut Gel – Nata de Coco (drained) 
  • 1 – 12oz jar Coconut Strings – Macapuno
  • 1 – 12oz jar Sugar Palm Fruit – Kaong (drained)
  • 1 – 12oz can Evaporated Milk 
  • 1 – 14oz can Sweetened Condensed Milk 
  • 1 – 7.6oz can Table Cream
  • Optional:  2 medium red delicious apples (cored, skinned, and diced)


DIRECTIONS

  1. Mix evaporated and condensed milk and cream
  2. Add and mix remaining ingredients
  3. Chill for about 2 hours
  4. Ready to Serve!

This is the easiet dessert recipe and my most favorite ever!  Please note that this is a party batch and it's very tempting to keep eating if left in the fridge.  Share it with family and friends if you are not planning on entertaining but would like to whip up a batch.  If you prefer a sweeter version, use less evaporated milk or perhaps skip it altogether.  This Filipino style fruit salad is the first dessert I look for at Filipino gatherings.  Dessert is my Kryptonite!
