Pasta Primavera

INGREDIENTS

  • 1/2 box of farfalle pasta 
  • 3/4c red bell peppers (chunks) 
  • 3/4c green bell peppers (chunks) 
  • 1/2c onion (chunks)
  • 1/2c cooked shelled adamame
  • 4-6 cooked bacon (chunks) 
  • 1 chicken bouillon (crushed) 
  • 2 tbsp olive oil (any cooking oil) 
  • 1 tbsp dried parsley 
  • 1/4 tsp pepper


DIRECTIONS

  1. Heat large skillet over medium heat
  2. Add 2 tbsp oil
  3. Sauté peppers, onion, and adamame for 2-3 mins then set aside
  4. Bring 8c water and 1 tbsp salt to a boil
  5. Add pasta and cook until al dente (10 mins) then drain
  6. Set aside 1 cup of pasta water
  7. Add drained pasta and all other ingredients to skillet with cooked vegetables
  8. Stir to ensure pasta is well coated
  9. Add 2-3 tbsp of pasta water as needed
  10. Ready to Serve!

I love pasta in any shape or form.  Whenever I want to feel extra healthy, I go with the vegan version.  Other times, I include bacon slices or shrimp to add flavor.  Either way, pasta is like a canvas and sky is the limit with your creativity.  There are endless combinations of vegetables, meat, and other ingredients you can indulge yourself with.  Play with the colors and try different variations.  Just have fun with it!


Almond Pesto Pasta

INGREDIENTS

  • 1/2 box farfalle or rigatoni pasta
  • 8 cups water
  • 1 tbsp salt 
  • 1 tbsp olive oil
  • 2-3 plum or vine ripe tomatoes (diced)
  • 8-10oz mozzarella (diced)
  • 1/4c grated parmesan


Pesto Sauce 

  • Blend 3c kale and/or spinach, 1/2c almonds, 1/2c grated parmesan, 3 cloves garlic, 1/2 tsp salt, 1/4 tsp pepper, and 1/2c olive oil until desired consistency


DIRECTIONS

  1. Boil water and salt in a medium to large pot
  2. Cook pasta to al dente
  3. Reserve a cup of pasta water
  4. Drain pasta, add olive oil and mix
  5. Cool for a few minutes 
  6. Add Pesto sauce, tomatoes, and mozzarella and mix
  7. Add some pasta water as needed
  8. Top with grated parmensan
  9. Ready to serve!

Pancit

INGREDIENTS

  • 2 carrots (thinly sliced)
  • 3 celery stalks (thinly sliced)
  • 1 medium onion (thinly sliced)
  • 1/4 head cabbage (thinly sliced)
  • 2 cups green beans (thinly sliced)
  • 2 cups snow peas (thinly sliced)
  • 6 cloves garlic (minced)
  • 8oz pancit canton pkg
  • salt and pepper to taste
  • 4 tbsp olive oil


Pancit Canton Sauce Mix

  • Mix 1-1.5 tbsp flour, 1 tbsp sugar, 4 tbsp soy sauce, 2c broth, 1 tbsp onion powder, 1 tsp garlic power, and 2 tbsp olive oil
  • Bring to a bubble in medium heat.
  • Salt and pepper taste 


DIRECTIONS 

  1. Heat large skillet over medium heat -  depending on skillet size, you may have to cook in batches
  2. Add 4 tbsp oil
  3. Add green beans and sauté for 2-3 mins
  4. Add carrots,  celery, onions, and garlic and sauté for 2-3 mins
  5. Add cabbage and snow peas  and sauté for 2-3 mins or until all vegetables are at desired tenderness 
  6. Add salt and pepper to taste then set aside
  7. Follow pancit canton sauce mix instructions
  8. Add pancit canton in the sauce
  9. Cook and continue to stir in the sauce for 5-7 mins or until noddles are cooked
  10. Add cooked vegetables and optional cooked meat and stir
  11. Ready to serve!

Pancit is a very popular Filipino dish.  It is rare to attend a Filipino celebration and not have pancit on the menu.  "Noodles represent long life and good health", which is why it is customary to have this dish at birthday parties.  Some prefer the bihon version (rice sticks or rice vermicelli) or a cobination of both bihon and canton. This dish can be vegetarian or complimented with chicken, beef, pork, or shrimp.  There are also many varieties of vegetables you can use like bok choy, bell peppers, or any stir-fry candidates you prefer.  "Live long and Prosper." - Eat noodles!
