Shrimp and Zucchini

sauteed shrimp, zucchini, and bell peppers

INGREDIENTS

  • 1 lb shrimp (peeled and deveined)
  • 1 medium zucchini (spirals)
  • 1/2 cup red bell peppers (chunks)
  • 1 tsp onion powder
  • 1/4 tsp garlic powder
  • 3 cloves garlic (minced)
  • pinch red pepper flakes
  • salt and pepper to taste
  • 2 tbsp olive oil

DIRECTIONS

  1. Heat large skillet over medium heat
  2. Add 2 tbsp oil
  3. Sautee minced garlic for 1-2 mins
  4. Add shrimp, onion, and garlic powder
  5. Cook for 2-3 mins and set aside
  6. Use same skillet to stir-fry zucchini spirals and bell peppers for 3-5 mins or until desired tenderness
  7. Add cooked shrimp and red pepper flakes
  8. Add salt & pepper to taste
  9. Ready to Serve!

Fried Salmon Bellies

INGREDIENTS

  • 1 to 1.5 lbs salmon bellies (skinned and 4-5 inch cut)
  • 1/2 tsp dried parsley
  • 1/4 tsp dried dill
  • 1/2 tsp onion powder
  • 1/4 tsp garlic powder
  • 2 tbsp olive oil (any cooking oil)
  • 1/2 tsp terriyaki sauce
  • Salt and pepper to taste
  • Optional garnish:  Lemon wedges

 DIRECTIONS

  1. Coat salmon with 1 tbsp oil and remaining ingredients 
  2. Heat large skillet over medium heat
  3. Add 1 tbsp oil
  4. Fry salmon bellies skin side down first for 1-2 mins each side depending on thickness
  5. Use same skillet to stir-fry preferred side dish
  6. Ready to Serve!

  • Fried salmon bellies dish is served with many varieties of side dishes. I personally prefer to serve this with zucchini and onions or broccoli rabe. It’s a matter of preference if you leave the salmon skin on, which will just take a little bit longer to fry because you will want the skin crispy.  You may have noticed that it rendered additional oil in the skillet.  It's all that omega-3 fatty acids.  It is the healthy kind of acids thought to help reduce the risk of heart disease and also promote healthy skin. 

Shrimp and Cabbage

INGREDIENTS

  • 1/4 head cabbage (strips cut)
  • 2 carrots (strips cut)
  • 1 medium onion (julienned)
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 cups peeled and deveined shrimp

Tangy Brown Sauce 

  • Mix 6 tbsp sweet chilli sauce, 2 tbsp soy sauce, 2 tbsp apple cider vinegar, 1 tbsp teriyaki sauce

DIRECTIONS 

  1. Heat large skillet over medium heat
  2. Add 2 tbsp oil
  3. Cook shrimp and set aside
  4. Use same skillet to stir-fry vegetables for 5-7mins or until desired tenderness
  5. Add salt & pepper to taste
  6. Add cooked shrimp
  7. Drizzle desired amount of sauce and stir
  8. Ready to Serve!
